Natural Casings – All natural casings, regardless if they are sourced from sheep, pigs or other animals, share the same history. It all begins with the domestic animal. The intestine is a co-product generated during slaughtering. It has to be processed several times before it becomes the fine casing for the premium sausage product on your plate.
Animal – Our "suppliers" spend their lives in a natural herding environment until they are ready for slaughter.
Slaughter – Obviously, the transportation routes to the slaughter house must be as short as possible. Once slaughtered, the animal's intestines occur as a byproduct from slaughtering and are immediately cleaned.
Sorting – Form the slaughter house, the intestines are shipped to a sorting facility, where they are sorted based on quality and calibre. They are then immersed in salt and shipped. Prior to being shipped overseas, they are medically inspected by veterinarians.
